The Fermín family has been curing hams for more than 65 years in the mountains of Salamanca, Spain. As stewards of the land adjacent to La Alberca national park, they have long been committed to environmental sustainability. These shoulder hams are certified 100% organic (EU, CAAE, and USDA). The pata negra pigs eat organically-grown grain when young. They then are released into the wild oak forests of the area to forage for acorns, grasses, and wild herbs. No antibiotics, no pesticides, no herbicides, no fertilizers, no GMO, no hormones. Just all natural jamón and organic sea salt. The taste is unbelievable.
